The ABC's of Nutrition
In this class you will learn key terminology and concepts related to the science of nutrition and
how optimal nutrition health impacts overall well-being. You will learn the importance of energy
nutrients, water, antioxidants, vitamins and minerals.  Also, you will learn how to use information
presented in the MyPlate.gov and new 2015-2020 Dietary Guidelines as a basis for developing
and practicing a comprehensive self-care program.  Anticipate learning healthy snacking tips
empowering you to eat healthier on the run! As a complement, you will learn the fundamentals of
weight loss and maintenance given the fact that optimal nutrition health includes reaching and
maintaining a healthy weight.

engaging in a regular fitness regimen. In this class you will learn how to safely engage in a life-
long proven fitness regimen that will optimize your health with a live demonstration on popular
exercise equipment.  Anticipate a class that will present an overview of the science of physical
activity as it relates to its impact on the human anatomy.  We will also discuss how to develop a
fitness regimen to engage in a safe weight loss and maintenance program.  Demonstration of
applicable physical activity will be presented to assure exposure to safe, efficacious and proper

Understand the New Food Labels & Grocery Shop Healthier!
High Fat, Low Calorie, Good Source of Fiber, Lite, Sugar-free…what does it all mean?  In this
class, we will take you on a virtual grocery shopping tour to teach you how to benefit from the
food labeling system and learn how to grocery shop for economical and healthier foods.  
Anticipate a class that will demystify, define and decode concepts related to the food labeling
system and food label jargon such as “lite”, “no Trans-fat” and “1/3 fewer calories”.  We will also
discuss geographical, social and seasonal trends as they relate to overcoming healthy food
inaccessibility and fluctuating food costs.  An overview will be provided as it relates to applicable
food technologies (e.g., innovative packaging) enhancing your food and nutrition plan. The
information presented in this course will prove essential in helping you build and practice a
comprehensive self-care program.

Grease, Salt, & Sugar Busters!
You can’t better care for yourselves without learning how to eat healthier. Likewise, you can’t eat
healthier unless you learn how to cook healthier with a live demonstration.   If it has been a goal
of yours to learn how to cook healthier, this practical course is for you.  In this class, you will
dedicate focus time to learn some of the hand selected chef secrets that are readily available in
our media fueled society.  But don’t be alarmed! Though healthier cooking means decreasing the
fat, salt and sugar from your favorite recipes and food items (e.g., your holiday favorites!), it does
not mean that well-known favorite taste has to be comprised: Thanks to the exciting world of
Food Science and Technology!

Diabetes Specialty Course
“Approximately 26 million Americans have diabetes, and it is estimated that 7 million people in the
U.S. are unaware they have it. The good news is that diabetes can be managed or prevented with
a few lifestyle changes. Whether you have been diagnosed with type 1, type 2 or gestational
diabetes, to successfully manage the disease you need to understand how foods and nutrition
affect your body. Diabetes affects the body's ability to make or properly use insulin, which leads
to high blood glucose or sugar in the blood. Maintaining a healthy blood sugar level is essential
to managing diabetes. Choosing nutritious foods and monitoring portion sizes help keep blood
sugar levels as stable as possible. If you have diabetes, a registered dietitian (RD) or registered
dietitian nutritionist (RDN) can provide medical nutrition therapy to help manage the disease
while ensuring you get necessary nutrients.”

Kidney Disease Specialty Course
The kidneys perform many important functions, including the removal of waste products and
excess fluids, and the critical regulation of the body's protein, sodium and potassium levels. If the
kidneys aren't working well, they don't filter blood properly, which means harmful substances can
accumulate in the blood. Normal kidney function is necessary to maintain a stable balance of body
chemicals. If you have kidney disease, a registered dietitian nutritionist (RDN) can teach you how
to choose foods that will ease the workload on your kidneys. People with kidney disease need to
make adjustments to diet and lifestyle to help live a longer and healthier life. Because heart
attack and stroke are more common among people with kidney disease, these changes are good
for the heart and kidneys. Dietitians can provide more detailed information about how to eat and
practical tips to address daily challenges. A dietitian can help develop an eating and exercise
plan that considers individual food preferences, level of physical activity, lifestyle and special
needs to help accomplish disease management goals.
